- Brown poultry and reserve
- Render chorizo
- Sweat in order: peppers, bay leaf, onion, garlic
- Mix in rice until well coated with oil.
- Add stock and reserved poultry
- Mix in peas now if raw.
- Arrange seafood with cooking times in mind
- Arrange garnish: Green beans, asparagus, pimentos.
- Finish with dry sherry
*Light olive oil for frying and stock not pictured, use as needed.
